Simple, sweet and delightful! These mini morsels are surprisingly satisfying in just one mouthful.
It’s a melt freeze situation with these ‘NO BAKE’ treats. Rather than reaching for that mini bag of sugary laden bounty bars, why not give this healthier version a bash?!
Satisfy your sweet tooth cravings without the guilt and without all those nasty additives. When you do nibble on them – they’ll whisk you away to a tropical paradise!
Serves: 15 mini sweets
Ingredients:

125g dark chocolate (I use 80% dark)

6 tablespoons coconut oil

4 tablespoons desicated coconut

1 teaspoon vanilla extract

1 tablespoon maple syrup/honey
* You also need little mini-cup cake cases
Method:

Melt the chocolate over a medium heat and spoon a thin layer of chocolate into the baking cases. Place the cases into the freezer on a flat tray for 10 minutes to set.

Mix the coconut oil, desiccated coconut, vanilla extract and maple syrup/honey in a bowl with a fork.

Remove the cases from the fridge, and spoon the coconut mixture on top of each chocolate layer. Place into the freezer once more, and allow to set for a further 10 minutes

Once the second layer has set, add a final layer of melted chocolate to each case and allow to set for another 10-15 mins minutes in the freezer.
* These bars can be stored in an airtight container in the fridge for up to a week. Keep them in the freezer for longer!
