As it’s officially summer, a time when people tend to start getting outdoors more, airing their fancy footwear and dusting off the bikes, it’s a great time to start incorporating quick and healthy snacks to keep us fueled right.
Feasting on chips and ice-cream is of course part and parcel of the sunshine days, but a healthy snack now and then is vital for the vessel that carries us.
You only need five ingredients to create these scrumptious balls of bliss, and they’re raw, so they only take a mere eight minutes to make.
Protein balls are a fantastic snack for pre and post workout, a nice little treat that give a little energy boost, whilst also providing protein, vitamin E and fibre.
Indeed, I also find these great in the morning if I’m in a rush, I can grab two, and happily munch on them in the car!
The subtle hint of cacao will help satisfy chocolate cravings, and you’ll get a nice little antioxidant boost at the same time.
This recipe yields about 14 balls.
- 1 cup dates
- 1 cup mixed nuts
- 3 tablespoons of raw honey
- 2 tablespoons almond butter
- 1 tablespoon or raw cacao powder (you can substitute with cocoa if you like)
Here’s for the really easy part, simply blitz everything together in a blender…
Then, simply shape the lovely mixture into balls, the size of a ping pong or golf ball is a good measurement to go by.
I do find an ice-cream scoop handy for scooping up the mixture, and then I just quickly roll them around in my hands for a few seconds.
These will last up to three weeks in the fridge, or alternatively, you can freeze them too.
